Application
It is added together with the other powders of the formula when making the batter or dough.
Dosage
It varies depending on the type of product, using a maximum of 6% based on flour basis.
It is important to consider the height above sea level, since according to it, adjustments may be needed. For example, in Mexico City (2200 m OSL) a dose of 40 grams of baking powder is enough in a batter, but at sea level, a dose of 60 grams would be needed.
